Join Chef Daniel Kedan, Assistant Professor of Culinary Arts at the prestigious Culinary Institute of America at Greystone, for an exclusive fried chicken cooking class at the Sonoma Family Meal kitchen in Petaluma. 100% of proceeds support SFM’s tuition-free culinary job training and food-security meals!
In this 2.5 hour class, Dan will show you the whole process of making the most delectable fried chicken, from brining, to fabrication, to frying, what fats to use, and more! You will also learn the process for making delicious biscuits to accompany. Afterward, enjoy a delicious family-style meal including salad and locally-sourced wines, featuring the fruits of your labor.
ABOUT DANIEL KEDAN:
Chef Daniel Kedan, a graduate of CIA Greystone’s inaugural associate degree class, has built his career around sustainable, ingredient-driven cuisine. He honed his skills at Thomas Keller’s Ad Hoc before opening Backyard, a Michelin-recognized farm-to-table restaurant in Sonoma County, with his wife, pastry chef Marianna Gardenhire. Their commitment to sustainability expanded with Bee Run Hollow, an organic farm focused on regenerative agriculture.
With a deep respect for local food systems, Daniel returned to CIA Greystone as a chef-instructor, sharing his expertise in restaurant operations and farm-to-table cooking. His contributions to the culinary world earned him Norcal Public Media’s Food and Wine Award in 2024, recognizing his leadership in sustainable food practices.
